Skoop Espresso Bars

- Toast oats in the oven at 350 until lightly browned (pay attention it can happen fast) set aside to cool.
- Put your choice of Healthy Skoop Protein Powder, cocoa, espresso and oats in a bowl gently combine with a spatula. Set aside.
- Melt and combine unsw. chocolate, brown rice syrup, almond butter until it bubbles lightly--remove immediately! Pour over and combine this with your dry mix. Mix well!
- Press into a parchment paper 8 x8 pan (so you can take them out easily and cut them!) and let cool.
Stick to the recipe for your first round, but know there is room for additions and creativity. You can customize your bar! I toasted coconut and added that to mine. Sometimes I use maple syrup, molasses, honey or agave for sweetener. I also added a little pink Himalayan sea salt. I used a little Sun Butter in this batch (careful with this nut butter, as it is drier then almond butter you would need to add a little more liquid (as in brown rice syrup) to make sure the bar was moist enough. You don't want a dry, crumbly bar. Finally, have fun packing them up, or rolling them into little balls so you can grab and go. Warning these are sweet! You will want to eat these like a candy bar. Remember they are for fueling your workouts, not your office work ;) Enjoy!
