Perri's Energy Balls
- 1/2 cup almond butter (I use Justin's, of course!)
- 1/4 cup + 2 tbs maple syrup
- 1 tsp vanilla extract
- 1 serving Healthy Skoop Breakfast Protein, chocolate
- 1 cup rolled oats (I like Bob's extra thick)
- 2-3 tbs almond milk (I like unsweetened vanilla)
- 3/4 cup unsweetened coconut flakes (I like the finely shredded kind)
- 1/2 cup flaxseed meal
- In a small bowl, mix the oats and almond milk together and let it soak while mixing the rest of the ingredients.
- In a larger bowl, mix the almond butter, maple syrup, vanilla extract and Super Skoop with a spoon until smooth
- Add the oat mixture, coconut flakes and flaxseed meal to the wet mixture until well combined.
- Roll into balls and store in the refrigerator
