Perri's Energy Balls

  • 1/2 cup almond butter (I use Justin's, of course!)
  • 1/4 cup + 2 tbs maple syrup
  • 1 tsp vanilla extract
  • 1 serving chocolate Super Skoop
  • 1 cup rolled oats (I like Bob's extra thick)
  • 2-3 tbs almond milk (I like unsweetened vanilla)
  • 3/4 cup unsweetened coconut flakes (I like the finely shredded kind)
  • 1/2 cup flaxseed meal

Perri's Energy Balls

  • In a small bowl, mix the oats and almond milk together and let it soak while mixing the rest of the ingredients.
  • In a larger bowl, mix the almond butter, maple syrup, vanilla extract and Super Skoop with a spoon until smooth
  • Add the oat mixture, coconut flakes and flaxseed meal to the wet mixture until well combined.
  • Roll into balls and store in the refrigerator
